Cauliflower Casserole

I was looking through my posted recipes the other day and realized I have yet to share a single vegetable recipe with you all.  Truthfully, I am not the best at eating vegetables, although I am trying to get better.  Because of this, though, most of our vegetable consumption is done in doctored up versions like this Cauliflower Casserole.  This is one of Josh and my oldest, most favoritest (like that, huh) recipes.  And even if you don't like cauliflower (like me), I can almost promise you this will be still be a winner.
Cauliflower Casserole
  • 1 large head cauliflower, broken into small florets
  • 1/2 cup melted butter
  • 1/4 cup grated Parmesan
  • 2/3 cup Italian bread crumbs
  • pinch salt
  • 1 tsp. crushed red pepper flakes
  • about 1 1/2 cups shredded Cheddar cheese



To make:
1.  Preheat oven to 350.
2.  Bring 2 inches of water to a boil in a medium saucepan (I used a large one here...oops).  Add cauliflower, cover, and cook 10 minutes.  Drain and place in 2 quart casserole dish when done.

3.  Meanwhile, mix melted butter, parmesan cheese, Italian bread crumbs, salt, and red pepper flakes in small bowl. 
4.  Sprinkle bread crumb mixture over cauliflower in casserole dish.

5.  Top with Cheddar cheese and bake 20 minutes.

Pretty easy, huh?  And super delicious!  Try it and let me know what you think

  2. Mmm. I love cauliflower - didn't even think about making it in a casserole! I cannot wait to try this out when I get home from my dorm - what a delicious meal!
