One of our favorite spots was Bagelworks, which appropriately served bagels, but they also had cookies at the register that were sold in packs of 3 for $1. Like I said, I used to always get chocolate chip, but one day, tried a bite of a friend's white chocolate macadamia nut, and let's just say I was in love. I was also a swimmer in high school often practicing twice a day (now that was actually crazy), so my teenage metabolism could easily handle some cookies with my lunch, and from that day forward, I would always get 3 (and sometimes 6...don't judge, remember I exercised) of my new favorite cookie to bring back to school with me.
Flash forward 10 years or so, and I am happy to report I have found the perfect white chocolate macadamia nut cookie recipe. This weekend, I was craving something sweet, and immediately turned to this gem, so now I can share it with you too:
White Chocolate Macadamia Nut Cookies
- 1 cup butter, softened
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 2 1/2 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup macadamia nuts
- 1 cup white chocolate chips
**This version makes about 3 dozen cookies, so scale back accordingly if you don't quite need that many!**
- Preheat oven to 350.
- Cream butter and sugars in bowl. Add eggs one at a time. Add each extract.
3. Meanwhile, in small bowl, combine flour, baking soda, and salt. Gradually add that mixture to the butter/sugar/egg/extract.
4. Remove from mixer and stir in white chocolate chips and macadamia nuts.
5. Drop spoonfuls on cookie sheet.
6. Bake for 10 minutes and then get ready to be in heaven.

lol- I never ate well in high school either..in fact I usually had a hot dog for breakfast, and cookies , ice cream or Suzy Q's for lunch....
