I've looked for ways to incorporate eggnog into baking in the past, but wasn't really satisfied with the results...until this year! I found a winner, y'all! These have a subtle eggnog flavor that is good for those eggnog lovers, but not too over-powering for those haters (I'm guessing anyway).
Frosted Eggnog Cookies
- 2 1/4 cup flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 3/4 cup unsalted butter, at room temperature
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 egg yolks
- 1 tsp. vanilla extract
- 1/2 tsp. rum extract
- 1/2 cup eggnog
Frosting:
- 1/4 cup salted butter, at room temperature
- 1/4 cup unsalted butter, at room temperature
- 3-5 tbsp. eggnog
- 1/2 tsp. rum extract
- 3 cups powdered sugar
1. Preheat oven to 350. Line baking sheet with parchment paper.
2. Whisk flour, baking soda, salt, nutmeg, and cinnamon together in large bowl. Set aside.
3. Cream butter, sugar, and brown sugar until fluffy.
4. Add in egg yolks one at a time, incorporating completely each time.
5. Mix in vanilla, rum, and eggnog.
6. Set speed on low and gradually add in dry ingredients. Stir until combined.
7. Drop by tablespoonfuls onto parchment paper.
8. Bake 12 minutes.
9. Allow to cool on cooling rack.
10. While cooling, cream butter, eggnog, and rum until fluffy. Add in powdered sugar. Add more eggnog if necessary.
