Oreo Cake

See this face?
Yeah, that's the face of a boy that loves himself some Oreo cookies.  So, naturally, I had to find an Oreo Cake recipe to make him for his big birthday celebration.  And obviously, I turned to Pinterest which, of course, delivered.  Because of a few modifications, some on purpose and some on accident, I am going to share with you my recipe below since it is the one I can vouch for.
Since it is based on a box cake recipe, it is actually pretty simple to make.  But because of the additions (and especially the buttercream), it seems much fancier than a simple box cake...and it a bit tastier too!
Oreo Cake
For the cake:
  • 18. 25 oz. box chocolate cake mix
  • 5.9 oz. instant chocolate pudding
  • 1 tsp. salt
  • 2 tsp. vanilla extract
  • 1 cup sour cream
  • 1 cup vegetable oil
  • 4 eggs
  • 1/2 cup warm water
  • 2 cups chocolate chips
For the buttercream:
  • 1 stick unsalted butter---at room temperature
  • 1 stick salted butter---at room temperature
  • 1 tbsp. vanilla extract
  • 3 cups powdered sugar
  • 3-4 tbsp. very cold milk
  • 15 Oreo cookies, crushed  (***I actually used 25 in my cake, but thought it was too much in the end, so I have reduced it in the recipe)
1.  Preheat oven to 350.  Line bottoms of two 9-inch pans with parchment paper and grease.
2.  Mix together cake mix, pudding, salt, vanilla, sour cream, oil, eggs, and water.  Stir in chocolate chips.
3.  Bake 25-35 minutes, rotating pans once halfway through.  Let cool 30 minutes before taking out of pans.  Cool completely on wire racks.
4.  To make buttercream: Cream butters.  Add vanilla.  Gradually add sugar, incorporating well each time.  Once all of sugar is mixed in, add milk 1 tbsp. at a time, mixing thoroughly each time until you reach desired consistency.  Stir in chopped Oreos.

Enjoy...with a big glass of milk!
