No Campfire Required S'Mores

S'mores are one of my all-time favorite treats, but unfortunately, I can't remember the last time I had an actual s'more.  Maybe it's just me, but it's not often, if ever, I'm sitting around a campfire.  Over the years, I have tried  brownie versions, microwave versions, and even Ben and Jerrys to satisfy my cravings, and while all were delicious, I am always on the hunt for others.
I pinned this recipe and a mere few days later, I took time during Colton's nap (do you see how excited I was about this...I even gave up some of my precious Colton nap time minutes?!?) to whip this up.  Fortunately, it only took about 15 minutes and was totally worth every second.  I'm not even going to admit how many sittings it took me to devour the entire mix...let's just say it was a s'more lover's dream.  Without further ado, here's the recipe:
S'More Mix
(I halved the original recipe, so these are the measurements I used)
  • 4 cups honey graham cereal (I used Golden Grahams)
  • 1 1/2 tbsp. butter
  • 1/3 cup corn syrup 
  • 1/2 tsp. vanilla
  • @6 oz. chocolate chips (I used semi-sweet cause that's what I had, but milk chocolate may even be better)
  • 1 1/2 cups miniature marshmallows
1.  Line cookie sheet with foil.  Put cereal in large bowl.
2.  In medium saucepan, heat butter, corn syrup, and chocolate chips until all is melted/mixed.  Remove from heat and stir in vanilla.  
3.  Pour chocolate over cereal and mix until cereal coated.  
4.  Add marshmallows and stir again to coat.
5.  Spread out on cookie sheet.  Wait a few minutes to a few days (if you have more self-control than me).
