Grown Up Mac and Cheese

Josh has been out of town for the last couple of days.  I HATE when he is out of town...taking care of Colton and Chipper by myself seems so daunting, it is lonely, and every noise completely creeps me out.  There are a couple of upsides, though: I get to control what's on tv and I can make some dinners that my lovely husband wouldn't eat. 
Josh hates brie cheese (trust me, I don't know why) and I...well, I am obsessed with it.  Back when I was in college, one of my friends introduced me to this Brie Pasta recipe, and I'm pretty sure that is where my love affair began.  The recipe is almost like a grown-up mac and cheese, but oh so tasty, and actually really easy to make.  For recipe sake, I am going to scale it as a pasta salad size (like to take and share), but it is pretty easy to scale down for just one person if need me...I should know, I thoroughly enjoyed it for dinner last night!  In fact, in the pictures you will see my scaled-to-one version, so you can use that as a guide (although be warned, I use lots of brie and had no basil)
You will need:
  • 1 box penne
  • 2 cloves garlic, minced
  • 1 1/2 cups chopped brie
  • 1/2 cup olive oil
  • 3/4 cup basil
  • 1 pint cherry tomatoes, chopped
To make it:
1.  Combine garlic, brie, olive oil, basil, and tomatoes in bowl.  Cover and let marinate.  I usually do this for about a half hour to an hour.
2.  Make pasta according to the box's directions.
3.  Combine warm pasta with brie mixture.  Stir and serve.
Yum-o!!!  Anyone else as obsessed with brie cheese as I am?  Have any other "husband is out of town meals?"
