Turkey Thursday Part 1

Now that we have officially hit November, it is go time for Turkey Day planning. I have decided to devote each Thursday this month with a Turkey-Day themed conversation. Today's focus: the obvious starting point, food.
With a much larger new house and a beautiful new baby to be thankful for this year, Josh and I could think of no better place to do our giving thanks than right here in our own lovely abode. We have invited the usual suspects join us, but to this point, are not sure who will. No matter who else chooses to attend, though, I have decided the first thing we need to conquer is the menu. My dilemma with Thanksgiving is always in trimming down the menu to an acceptable amount of food (although we will in all reality have about 15 or more people joining us in this feast); there is just so much yummy food that I really only get to have this one time of year that I have a hard time eliminating anything (anybody else in this boat, or is it just me?). So, thus far, this is what I'm thinking...

Appetizers:
Sugar and Nut Glazed Brie with water crackers and apple slices
Baked Cream Cheese
Spinach Brownies
Meal:
Fried Turkey (per Josh)
Honey Baked Ham
Sweet Potato Casserole
Green Bean Casserole
Slow Cooker Stuffing
Mashed Potatoes
Cranberries
Creamed Corn
Rolls
Dessert:
Pumpkin Cheesecake
Pecan Pie
Apple Pie
something chocolate if my brother joins us
Do you see what I mean? That seems like a ton of food doesn't it, and none of it is remotely healthy...hmmm. I am ok with the day of splurging, but feel like there should be at least one non-glutonous item. Any suggestions...there has to be a healthy Thanksgiving side out there!
