French Toast Fantasticness


This weekend, our tailgate started at 10AM, and as such, was a brunch theme. MMMM...mimosas and an excuse to make one of my all time favorite, although totally guilty, pleasures: French Toast Casserole. Now, I'm assuming not many of you have a brunch tailgate you are heading to any time soon, but with the holidays coming up, this is the perfect make it the night before breakfast to have with company or even Christmas morning. So, here's the details:


Ingredients:



1 French baguette, sliced into 1 inch slices




6 eggs




2 cups half and half




2 teaspoons vanilla extract




1/4 teaspoon cinnamon




3/4 cup butter




1 1/3 cup brown sugar




3 tbsp. light corn syrup


To make:




  1. The night before, combine eggs, half and half, vanilla extract, and cinnamon in large bowl. Beat well. Butter a 9x13 baking dish, and arrange bread in bottom. Pour egg mixture over bread. Cover and refrigerate over night.


  2. Preheat oven to 350. Cover casserole with foil and bake 20 minutes.


  3. Meanwhile, combine butter, brown sugar, and corn syrup in small saucepan. Heat until bubbling.


  4. After the 20 minutes, uncover the casserole. Pour butter sauce over bread and cook an additional 20 minutes uncovered.

Trust me, while your waistline may not thank you, your belly certainly will. DELICIOUS!
