Tasty Tuesday: Hot Corn Dip (plus a bonus app)

This past weekend, we hosted a s'more party. There will be more on that tomorrow, but for today, I wanted to share with you a couple of the awesome appetizers we served.  There were a few of us (myself included) that were so enamored with the appetizers we didn't even bother to eat a real dinner.  I don't know about you, but I always find appetizers and desserts to be an acceptable meal!
But I digress....back to the point: the appetizers!  They were easy, warm, and yummy...and perfect for a any party.  Just like the rest of my pictures from the night, this is pretty pathetic, but hopefully that won't deter you from trying them!
Hot Corn Dip
  • 2x11.5 oz cans Mexican corn
  • 2x4.5 oz. cans green chiles
  • 8 oz. cheddar cheese
  • 1 cup mayo
  • 3/4 cup grated parmesan
1.  Preheat oven to 350.
2.  Mix all in a bowl and then spread in a 9x13 baking dish.
3.  Bake 30-40 minutes.

The other two appetizers in the above picture are a hot cheese dip (which you can find here) and bacon wrapped tater tots.  There's really not a recipe per se for the tater tots, but they're good and easy to make!  Just defrost some frozen tater tots for a half hour or so.  Then, cut some bacon in half and cut some slices of American cheese into ninths.  Assemble each tot by nestling a cheese piece next to it, wrapping them up with a half slice of bacon, and securing it with a toothpick.  Bake them at 450 for 15 minutes or until the bacon is crispy.  
Again, easy, warm, and yummy!
