Time Out

I don't know about you all, but I feel like I have been in perpetual holiday mode around here.  Every craft, every recipe, every minute of free time, seems to be filled with getting ready for the holidays in some way.  So, when I stumbled across this chocolate-peanut butter recipe on Pinterest a couple of weeks ago, I figured it was a good time to take a brief respite from the holiday stuff and try it out (after all, I only have a few more weeks of getting to indulge in stuff like this before post-baby dieting begins!).  They're pretty yummy, especially if you have a chocolate-peanut butter combo obsession like yours truly.
Chocolate Peanut Butter Pretzel Bites
  • 1 cup creamy peanut butter
  • 2 tbsp. butter, softened
  • 3/4 cup confectioner's sugar
  • 3/4 cup brown sugar
  • pretzels
  • 1/2 bag semi-sweet chocolate chips
1.  Combine peanut butter, butter, and sugars until creamy.  
2.  Use a teaspoon measure to scoop the filling.  Shape into a ball and put on one pretzel.  Place another pretzel on top.  Once you have filled up whole tray, put in the freezer for about 30 minutes to harden.
3.  Melt chocolate chips in microwave in 30-second intervals.  Remove pretzel sandwiches from freezer and dip each into the chocolate.  Return sandwiches to wax paper and then set on tray again.  Store sandwiches in refrigerator until you're ready to eat!
