Comfort Food

Now that Fall is upon us (although admittedly the weather here in Va. Beach keeps backtracking to summer), comfort food is now a regular feature on our dinner menus.  When I think "comfort food," I think warm, stick to your ribs, totally not good for you stuff.  Regular old mashed potatoes are obviously a perfect fit, but this recipe takes the whole mashed potato thing up to a whole new, delicious level.  Trust me...these are soooo tasty and definitely well worth the tiny bit of extra effort.
Mashed Potato Casserole
  • 1 cup milk
  • 2 eggs, beaten
  • 8 oz. cream cheese
  • 8 oz. onion dip (although I use the whole 12 oz. Helluva Good dip package!)
  • 2 cups water
  • 1/2 cup margarine
  • 1 tsp. salt
  • 3 cups mashed potato flakes
  • 2 tbsp. margarine
1.  Preheat oven to 350.
2.  Grease 2 1/2 quart casserole dish.  
3.  Blend together milk, cream cheese, onion dips, and eggs in large bowl.  
4.  In saucepan over medium heat, combine water, margarine, and salt.  Bring to a boil and then add potato flakes.  Remove from heat and stir together.
5.  Add potato mixture to cream cheese mixture and stir well.
6.  Pour into prepared dish.
7.  Dot top with margarine and bake for 30-45 minutes.
