Burrito Pie

I don't know about you, but cold weather makes me want to fill my belly with warm, filling foods.  Well, with winter extending its chokehold around here, I figured it was high time I share with you one of our favorite warm, yummy, satisfying foods.  While this Burrito Pie (or Mexican Lasagna, whichever suits your fancy) is not typical "comfort food," it certainly rises to the winter challenge.  Plus, with just a few minor tweaks (I've put them in parantheses for you), it can be relatively good for you.  So, here it is:

Burrito Pie
  • 1 lb. ground beef (95% fat free)
  • 1/2 onion, chopped
  • 1 tsp. minced garlic
  • 2 oz. can sliced black olives, drained
  • 10 oz. can tomatoes with green chile peppers, drained
  • 8 oz. taco sauce
  • 16 oz. refried beans (or black beans)
  • 2 flour tortillas (whole-wheat tortillas)
  • 8 oz. Colby cheese (2% milk or fat-free)
  1. Preheat oven to 350.
  2. Over medium heat, saute beef for 5 minutes.  Add onion and garlic and saute 5 more mintues.  Drain excess fat.  Mix in olives, tomatoes, beans, and taco sauce.  Reduce heat to low and simmer 15-20 minutes.
  3. Spread meat in bottom of 8 in. square pan.  Cover with tortilla, more meat, cheese, tortilla, meat, and cheese again. 
  4. Bake 20-30 minutes.
  5. Serve with sour cream:)

  1. that sounds yummy & similar to my mexican pizza

    4 soft shell tortillas
    1/2 can refried beans (you can use more if you want)
    1 jar salsa (whatever kind you like)
    1 jar queso (whatever kind you like)
    1 lb ground hamburger
    1 package taco seasoning
    1 jar (small) sour cream
    1 package of mexican blended shredded cheese

    Preheat oven to 375*
    -Brown hamburger meat, drain, then add seasoning & water (just like package says lol)
    -layer tortilla shells with thin spread of refried beans (i microwaved them a little so it was easier to spread), 3 spoon fulls of salsa, 1/4 of hamburger mix, & a few pinches of shredded cheese. **i did it in that order, its easier to spread BUT DO NOT PUT SHREDDED CHEESE ON 1 OF THE TORTILLAS FOR THE TOP
    -stack tortillas in a glass pie baking dish (or metal doesn't matter)
    -on the top layer you will spoon queso dip instead of shredded cheese, whatever amount you want... I used about 5 spoon fulls
    -bake for about 10-15 minutes and its ready!

    We cut these into 1/4s & then top with sour cream. It is very very filling.
